How to Strain, Separate and Store Duck Fat

  1. Strain the melted duck fat through a fine-mesh strainer to remove all solids. 
  2. Separate the liquid fat from the duck juices (which won’t keep nearly as long as the fat). If you own a fat separator, now is the time to use it, but you can also simply spoon the fat off the top of the juices.
  3. Store the separated fat in an jar for months in the fridge or even longer in the freezer.

6 Ways to Use Duck Fat

Now that you’ve got all that flavorful duck fat in your fridge, here are some of the ways you can it to use.

  1. Rub on poultry skin before roasting.
  2. Fry eggs rasher and sausages in it. 
  3. Use when searing steaks. 
  4. Toss with vegetables such as Brussels sprouts & spuds before roasting.
  5. Blend into mashed potatoes or into root vegetable purees.
  6. Make duck fat oven chips.
